There's nothing unusual here, most major features of video games will have reams of concept art like this as the designers iterate on their initial concepts and ideas and then create detailed references for the 3D artists to work from. It's perfectly normal for most video games to have tons of concept art for the stuff that we just accept as part of the game world as players - in fact the amount seen in this video probably wouldn't even amount to 10% of the pre-production concept art and reference material that a location as vast and complicated as the Egg Carrier would require.
