Rush would be a great story to adapt.

The premise of multiple worlds is already baked into the premise of the film series. Blaze is a beloved character who serves the antagonist role well in her first appearance.
The premise is easy to sell because you can get double the Jim Carrey.

The only downside I see is the story being too similar to Sonic 3.
